Hannah's Homemade Bread

    Ingredients
    1 1/2 cups hot water
    1 cup milk
    3 eggs
    1/3 cup oil
    1/3 cup honey
    1 Tbsp lecithin
    2 Tbsp gluten
    7 1/2 cups whole grain flour
    1 Tbsp salt
    1 1/2 tsp. instant yeast

In a mixer, combine liquid ingredients. Add yeast and rest of dry ingredients, reserving some flour for kneading. Mix on medium speed with a dough hook. If no mixer is available, mix ingredients together in a bowl and knead by hand. After thoroughly kneaded (about 15 minutes), allow to sit undisturbed until it is double in size (about 30-40 minutes). Knead again in the mixer or by hand. Divide into four separate balls. Knead and form each ball into a loaf and place in a greased loaf pan.

Bread rises best in a warm and moist environment. Turn on the oven for about two minutes, then turn off. Place a pan of water on the bottom rack of oven. Turn on the oven light (keeps it warm) and place the four loaves in the oven for the second rising. When it is double in size (about 30-40 minutes), leave the loaves in the oven and set it to 350°. Cook for approximately 25 minutes, or until the top is golden brown.
