Almond Milk
A delicious and easy dairy-free milk substitute

Here is a recipe from my book "The Great American Detox Diet."
Almond milk is a wonderful substitute for kids and parents alike who need to avoid dairy. Easy and naturally sweet, almond milk will keep in an airtight glass container for up to 3 days.

    Almond Milk
    2 cup unsalted slivered almonds
    4 cups water
    1 teaspoon pure vanilla extract
    2-4 tablespoons maple syrup to taste

1. Combine the almonds and half of the water in the blender.
2. Pulse for 20 seconds and then blend on a low setting for 2 minutes. With the blender still running, add the rest of the water a little at a time, then the vanilla and syrup.
3. Blend for one minute more. Line a colander with a cheese cloth and pour the milk through it. Squeeze the excess out of the almond meat in the cloth.
