Hannah's Homemade Muffins

3 cups spelt or wheat berries, milled fine (this yields approximately 4.5 cups of whole grain flour if you would rather just use that)
3/4 cup of sucanat (natural cane sugar, it depends on how sweet you want them)

1/2 cup flax meal
2 tsp salt
2 tsp soda
2 tsp baking powder
2 tsp. cinnamon
3 cups soy milk*
2 eggs (or egg substitute)
1 cup extra light olive oil
1 cup honey
1 Tbsp. vanilla

Combine dry ingredients, add wet ingredients, then I add a few cups of carrot pulp from my juicer in the morning and a few handfuls of raisins.

* more soy milk can be added if it seems too dry.

Then spoon it out into the muffin pan, put them in the oven at 350 degrees, and tell the kids they have about twenty minutes to finish their morning chores before breakfast is ready.

Yields 24 muffins.
