Barley
Soup
Some days seem to be made for soup! Scrumptious, satisfying soup...
like this delicious barley soup recipe that has been in my family's
recipe book for decades. Grab a spoon and enjoy!
3 Tbsp. butter
1/2 cup barley
1 bunch minced celery
1 minced onion
3/4 cup cream (lightly whipped)
1 Tbsp. flour
6-8 cups chicken stock
Melt butter in
pot.
Add barley and vegetables.
Cook until onions are transparent.
Stir in flour and chicken stock.
Simmer and stir.
Let soup simmer for 4 hours.
Add cream 1 hour before serving.
Additional seasonings to consider: garlic, seasoning salt, and pepper.
